1 c. chicken broth

Curried Couscous Turkey Salad

1/2 tsp. salt

1/2 tsp. curry powder

1/2 c. golden raisins

1 tbsp. minced crystallized ginger

1 c. mayonnaise

3 tbsp. fresh lemon juice

3 c. cubed turkey

1 c. couscous

1/3 c. chopped celery

1/3 c. green onions

1/2 c. toasted slivered almonds

1 c. seedless red grapes, cut in half

1 orange, peeled & cut into pieces

3 tbsp. fresh parsley

Directions:

Bring broth, salt and curry powder to a boil in medium saucepan over high heat. Stir in couscous, raisins and ginger. Remove from heat, cover and let stand 5 minutes. Uncover, cool to room temperature.

In a large bowl, blend together mayonnaise and lemon juice. Add turkey, celery, onions, almonds and couscous mixture; gently stir together. Fold in grapes, orange and parsley. Cover and refrigerate several hours before serving.

Serves 6 to 8.
