Potato Soup

Ingredients:

8-10 lg. potatoes – peeled and cubed

2 cans of Cream of Celery Soup

2 cans Cheddar Cheese Soup

1 lg. onion – diced

Salt and pepper to taste

 

 

Directions:

Put the potato cubes into a pan of boiling water, just enough water to cover the potatoes. Once it reaches the boiling point, add the salt, onions, and Cream of Celery Soup. The Cheddar Cheese Soup should only be added once the potatoes are at least half-done. Continue cooking until potatoes soften, reduce the heat and continue to cook until the mixture reaches the correct thickness. (Extra bits of potato can be added if needed.)

This delicious soup is great when served over cornbread.
