Perfect on its own or served over cooked Chinese long grain white rice.


2 pieces of Chicken Breasts, sliced into ¼” slices
1 bunch Bamboo Shoots
1 bunch Mangetout (or Spring Peas)
1 whole Red Bell Pepper, halved, without seeds and cut into strips
1 small White Onion, sliced
1 Whole Garlic Clove, chopped
1 tablespoon Peanut Oil

Preheat wok over medium high heat.

Add 1 tablespoon peanut oil and chopped garlic to wok. Stir-fry 30 seconds.

Add chicken to wok. Stir-fry 2 minutes, or until chicken is cooked almost through.

Add remaining ingredients. Stir-fry until vegetables are crisp tender.
